DIRECTIONS:
Place the pork shoulder chunks in a bowl and toss with flour. Season with salt and pepper to taste.
When ready to cook, fire the Traeger Grill to 5000F. Use desired wood pellets when cooking. Place a large cast iron skillet on the bottom rack of the grill. Close the lid and preheat for 15 minutes.
Place the tomatillos, jalapeno, onion, and garlic on a sheet tray lined with foil and drizzle with 2 tablespoon olive oil. Season with salt and pepper to taste.
Place the remaining olive oil in the heated cast iron skillet and cook the pork shoulder. Spread the meat evenly then close.
Before closing the lid, place the vegetables in the tray on the grill rack. Close the lid of the grill.
Cook for 20 minutes without opening the lid or stirring the pork. After 20 minutes, remove the vegetables from the grill and transfer to a blender. Pulse until smooth and pour into the pan with the pork.
Stir in the chicken stock, green chilies, cumin, oregano, and lime juice. Season with salt and pepper to taste.
Close the grill lid and cook for another 20 minutes.
Once cooked, stir in the cilantro.
